Try this easy fast rocky road fudge recipe

I’m partial to most chocolate based foods, and can never resist rocky road. I’m less fussed on fruit and nut based chocolate, but if I get to choose the fruit to add, it works. For me, that means cherry. Rocky road fudge was an obvious choice to try when making my easy microwave fudge.

What’s great about this rocky road fudge recipe, is being able to add whatever you want to it. So if you’ve got leftover sweets or chocolate biscuits, chop them up and add them. Got random dried fruit, throw it in.

The base is still sweetened condensed milk and chocolate. Then just add your flavour ingredients.

I stuck to the classic biscuits (digestive in my case, leftovers not needed for a cheesecake recipe, and a little bit stale), mini marshmallows, hazelnuts and glace cherries. You could add whatever nuts you have too, just cut them in half to make them easier to mix, chop and eat.

Only needing a couple of minutes in the microwave to melt the chocolate with the condensed milk, then stir in the dry ingredients, it makes this fudge so fast to make.

Then just 2 hours in the fridge in a lined baking tray or container and it’s ready for eating. Or cut it up and give it away in pretty tins or ribbon wrapped cellophane bags for gifts.

I usually have most of the ingredients in our larder, so this is a nice easy weekend make, great for children to help make.
